Crisped Coconut Flakes
In place of oatmeal and granola for breakfast cereal, we sometimes enjoy a treat of crisped coconut flakes with cinnamon sprinkled on top and some raisins in milk. It does a great job imitating granola. (Since we're trying to stay away from grains. And oats...are a grain. Even though sometimes I like to ignore that fact...)
To crisp the coconut flakes, just heat them in a hot skillet (no oil or anything) and watch them constantly. Sprinkle with salt and cinnamon for tastiness. Stir a bit, but don't let them burn! It doesn't take very long and they're done. So just watch closely till they're to your desired state of crispiness. I've never actually done this...it's Daniel's special project and he is the pro. I just gladly partake in the yumminess afterwards.
